Mini Caramel Apple Pies

So they aren't the prettiest things, but they are flipping delicious. Oh and cute. Everything mini is cute. 




This was our dessert for our Super Saturday last week. (You can read that post Here) I was lucky enough to have 3 amazingly cute helpers and these were made very quickly.

Dylan chopped the apples into little pieces.


 Corbin helped me mix together the apples with all of it's sugary goodness.


While we were mixing the older monsters used a big cup to cut circle out of the pie crust and placed them in a muffin pan.

Don't laugh at my nasty silicone muffin tin. It's clean, it's just stained. 4 yrs of use does that to a pan. Anyone know how to remove stains from silicone?


Once the crusts were done it was time for filling! Apple filling first!

Next comes the caramel syrup. Don't be stingy with it!


 We took whatever pie crust was left over from making the bottom crusts and rolled them out. I sliced them into thin slices and let the boys do there thing with topping off the pie. Which is why they look so...not pretty. 

 They turned out pretty...interesting.

 Off to the oven they went! They came out looking Delicious!


Topped with a little warm vanilla ice cream and we had an amazing snack! The boys sure loved them.



Mini Caramel Apple Pies

1 box pre-made pie crust
3 cups of diced, peeled apples
1/2 tbsp Lemon Juice
1/4 cup sugar
1/8 cup of flour
1/8 cup packed brown sugar
1/4 tsp of cinnamon
1/8 tsp of nutmeg
Caramel ice cream topping

Preheat oven to 375 degrees.

In a large mixing bowl toss apples with lemon juice. Combine granulated sugar, flour, brown sugar, cinnamon and nutmeg. Add to apples and toss until coated. Set apple mixture aside. 

Prepare your pie crusts by cutting out circles and stuffing them into the cupcake tins. Use whatever you have on hand. We used cups...we aren't fancy.

Fill your prepared crusts with the Apple mixture. 

Drizzle Pour your caramel on top of the apple mixture. 

Top your pie with more crust in whatever way you want. 

Bake in oven for about 15-20 min. Just until browned. Honestly I can't tell you the exact time because I'm always watching my food and pulling it out when I see it's done. 

Finally ENJOY! They are delicious and perfect little snacks!
