Peanut Butter Granola



I originally found this recipe on Shape.com
It looked simple enough. I had all the ingredients and I love me some granola! 

It came together in 5 minutes and I had a 3 year old "helping" me. It baked for about 7 min. Cooled for about 15. Super quick. 

I did double the recipe because I have a house full of granola lovers. Honestly, I'm thinking next time I might even triple, possibly quadruple it. It did not last long at all! 

The kids LOVED this granola. I thought it was tasty, but I think next time I will omit the cinnamon and replace it with ground Flax seed. I wasn't a huge fan of the cinnamon flavor it added.  I also added raisins to it, because raisins are delicious.

Peanut Butter Granola

2 tbsp of Creamy Peanut Butter
2 tbsp of Honey
1/4 tsp of Cinnamon
1/4 tsp of Vanilla Extract
1 C. of Oats

Directions:
Preheat oven to 325 degrees. Spray cookie sheet with non-stick cooking spray and set aside. Combine peanut butter and honey in a bowl and microwave until peanut butter melts (approximately 20 seconds). Stir.
Stir cinnamon and vanilla into peanut butter and honey mixture. Add oats and stir until oats are completely covered in peanut butter mixture. Spread out oat mixture onto prepared cookie sheet and bake for 7 -8 minutes until granola is slightly browned. Let cool until granola is crunchy.

 Preheat oven to 350 degrees. Spray a cookie sheet with non-stick spray and set it aside. Mix peanut butter and honey together and microwave until the peanut butter melts (about 20-30 seconds).

Add the cinnamon and Vanilla into the honey mixture. Carefully add the oats until they are coated. Spread it onto the cookie sheet and bake for 7-8 minutes. Allow it to cool until the Granola is crunchy.
 Enjoy!
