Apple Fritters


One Father's Day, I think it was David's 2nd (maybe 3rd) I woke up early and wanted to make the day really special for him. Unfortunately the day had other plans...

I can't even remember all that went wrong (I probably blocked out the memories), but from the second I woke up, it was one disaster after another. The last straw was these donuts. We had made them before, well, David had made them before and I knew he loved them. I wanted to surprise him with them when he woke up.

I made the batter and started attempting to fry them. Being the young and inexperienced cook I was, it was a huge failure. I wasn't smart enough to use a thermometer to get the temp right. I didn't have a fancy deep fryer. I ended up with either raw donuts or burnt to a crisp donuts. Not one single donut worked out. Not one. 

I woke David up that Father's Day crying. Probably blubbering like a fool. I just wanted to give him a special day and nothing went right. I couldn't even make him breakfast! Luckily he was really sweet, only laughed a little bit and the day gradually got better. 

We hadn't made those donuts again, until now. I'm not sure why they randomly popped into my head, but I decided to try them again, now that we have a deep fryer that rarely gets used. 

So I'm sharing the recipe (and my sad story) with you. 

The recipe comes together really quickly. The hardest part, if you even consider it hard, is peeling and dicing up 3 cups worth of apples. That's a lot of chopping! I used Braeburn apples, because they are softer and I love the flavor.

     They are super easy to mix, the boys pretty much did all the mixing with very minimal help.

 According to the monsters "Blech! That looks grossss!" But I promise you, they are delicious!

 I don't have pictures of the frying process because my battery died. Sorry, I'll do my best to explain the frying process.

Just drop spoonfuls of batter into the oil and cook until a golden brown. Usually about 5 min or so. We found SMALL spoonfuls worked best. About a teaspoon. It may seem small, but these puff up a lot. 

When they are cooked, you'll end up with delicious apple goodness. You can sprinkle them with cinnamon sugar or with powdered sugar.
    
These are a huge hit in our house. David couldn't stop eating them. The boys loved them and even Pikachu approved!


 Here is the recipe! 

Apple Fritter Donuts



Heat the oil in a deep-fryer or electric skillet to 375 degrees 
 In a large bowl, stir together the flour, sugar, baking powder and salt.


 Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
 

Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.
