Chocolate Chip Muffins

I'm not a morning person. At all. It's safe to say I hate mornings. People always told me that once you have kids you get used to mornings. Lies. All lies.

My kids will never have memories of me waking them up with piles of pancakes, bacon, fresh fruit, etc for breakfast. They are very well acquainted with cereal and pop tarts and I'm not ashamed to admit it. If they want pancakes, I'll make them for dinner.

Today was no different than any other day. I dropped Dawson off at school and wanted to sit in my chair, drink my coffee and quietly read...for 3 to 4 hours. Corbin of course had other plans. Sigh.

He wanted to make muffins. Chocolate Chip Muffins. So off to the kitchen we went. Slowly.

At least he helped.

He stirred.


Made sure there was just enough chips left in the bag for him to eat.
  
 He also helped clean a spoon off for me while I was doing dishes. We ain't scared of salmonella in this house.
      
Finally they were done!

They turned out pretty tasty. But they have chocolate, so I didn't expect any less. Corbin didn't complain. 


My favorite thing about these muffins is the lack of mess they create. Normally I don't like giving the boys muffins because of the crumb factor. Once these muffins cool down, they aren't nearly as crumbly as other muffins we have made. They are almost a cross between a cookie and a muffin.
 
 Now the boys have breakfast for the next couple of days!! Mommy points!
Here is the recipe if you want it. It's easy peasy and has normal ingredients one usually has on hand. Which is why I picked it. 

Chocolate Chip Muffins
2 cups all-purpose flour
1/3 cup light-brown sugar, packed
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter, melted and cooled
2 eggs, lightly beaten
1 teaspoon vanilla
1 (11 1/2 ounce) package milk chocolate chips
1/2 cup walnuts or 1/2 cup pecans, chopped (optional)

Directions:

  Preheat oven to 350°F.  Grease a muffin pan.
 
  In a large bowl, stir together flour, sugars, baking powder, and salt.
 
  In another bowl, stir together milk, eggs, butter, and vanilla until blended.
 
  Make a well in center of dry ingredients. Add milk mixture and stir just to combine.
  
Stir in chocolate chips and nuts.

Spoon batter into prepared muffin cups. Bake for 15-20 minutes or until a cake tester inserted in center of one muffin comes out clean.
Allow to cool for 5 minutes before serving.
